Spanish Brown Rice

Ingredients
2 cups uncooked brown rice1 tablespoon canola oil1 medium onion chopped1 8 oz. can Goya Spanish-style tomato saucewatersalt to taste (optional)
Directions
heat oil in medium sauce pan. Saute onion until soft. Add rice and cook until rice becomes chalky. Stir in tomato sauce (and salt if desired) and cook for 5 minutes. Add enough water until the water is 1" above the rice. Bring to boil and simmer until rice is evaporated. Approximately 20 minutes. Serves 8 to 10
