Juanita's Fiber Muffins

Ingredients
1c. Oatmeal, 2c. flax seed meal, 1tsp.cinnamon, 1tsp. baking soda, 1tsp. baking power, dash of salt. 1c. applesauce, 1/2-1c. soy milk, 1pat. butter, 1/2c. natural sweetener, 1 egg. Add fruits and or nuts as desired (will add calories). You can use zero calorie sweetener. You can leave out the butter. I sometimes like to use a tablespoon of mayo instead of butter.
Directions
In a bowl combine dry ingredients. In another bowl combine wet ingredients. Combine all together.

Scoup out into small muffin tin sprayed with 0 cal cooking spray. Makes about 20-24 mini muffins.
