Package of seaweed sheets- 8 sheetsPackage of Mori-Nu extra firm silken tofu- 12 oz1 cucumber cut into strips1/2 box of Neufchatel Cheese- 4 oz (or low fat cream cheese)1/4 cup alfalfa strips1 garlic clove, minced2 cups cooked brown rice1 tbsp olive oil
Heat oil in pan with garlic. Add tofu cut into small slices. Fry until heated through and slightly crispy. Mix together with rice.
spread about 1 oz of cheese on seaweed sheet. Add a little less than 1/4 cup of rice mixture and spread it over as much of the sheet as possible. Place cucumber and sprouts on top of the rice. Roll the sheet into a cone shape.
Makes 4 servings (2 rolls = 1 serving).
