Su!'s Chilli Con Carne

500 grams Extra Lean Ground Beef1 Can Canned Tomatoes1 Can Red Kidney Beans (Drained)2 tsp Hot Chilli Powder1 tsp Ground Cumin1 tsp Ground Coriander1 Cup Chopped Raw Onions3 Cloves, Garlic1 Cup Sliced Raw Sweet Red Peppers1 Jalapeno Pepper1/4 Cup Tomato Paste1 Cup Beef Stock1 tsp Olive Oil
Heat the Olive Oil in a large saucepan.
Gently fry the raw onions and garlic for about 5 minutes or until they start to become tranparant.
Add Ground Beef and continue to fry until browned. Drain excess fat.
Add the Sweet Red Peppers, Jalapeno Pepper, Canned Tomatoes, Tomato Paste. Beef Stock, Hot Chilli Powder, Ground Cumin and Ground Coriander.
Bring to the boil and then reduce eat and simmer for 20 minutes.
Add the Red Kidney Beans and simmer for a further 20-25 minutes.
Can be served either with rice or a baked potato.
f you prefer a hotter or milder chilli con carne substitute the hot chilli powder for a milder
version.
