Easy Low-Carb Chili with Black Soy Beans

Ingredients
1 can Muir Glen Fire Roasted Tomatoes1 cup Muir Glen Fire Roasted Tomatoes with Green Chili1 medium onion, chopped2 stalks celery, chopped1 red sweet bell pepper, chopped (can use any color sweet bell pepper)1 tbsp olive oil1 lb ground beef1.5 cups water, or more or less to get right consistency1 can Eden Organic Black Soy BeansSalt and Pepper to taste (optional)Chili powder to taste (optional)Cheddar cheese for garnish (optional)Sour cream for garnish (optional)
Directions
Chop the onion, bell pepper and celery. Soften the onions, peppers and celery in a little olive oil over low heat. Brown the ground beef. Add beef to veggie mixture in a large pan and add canned tomatoes and black soy beans. Add water as needed. Simmer until it tastes good, 30 minutes to 60 minutes. Add salt and pepper and other seasonings to taste ( I didn't add any other seasonings since I am watching my salt intake and the spice was just right for me). Makes approximately 6 1 1/3 cup servings. Garnish with cheddar cheese and/or sour cream if desired.
