Fagioli Soup

Ingredients
1 lb. lean Ground Beef1 small onion diced (1 cup)1 large Carrot- julienned (1 cup)3 Celery stalks- chopped (1 cup)2 Garlic cloves- minced1 can (16 oz) Red kidney beans- with liquid1 can (16 oz) Great Northern beans- with liquid16 oz can tomato sauce1 12 oz can V81 Tbsp white vinegar1 1/2 tsp salt1/2 tsp dried basil1/2 tsp dried oregano1/2 tsp ground black pepper1/2 tsp dried thyme
Directions
Serves 8

Brown beef in large saucepan or soup pot over medium heat. Drain fat. Add onion, carrot, celery and garlic, simmer 10 minutes. Add remaining ingredients and simmer for 1 hour.

OR

Brown beef, drain fat. Place remaining ingredients in crockpot with browned beef. Let cook all day on low or until celery is tender.
