Low-Fat Apple Walnut Chicken Salad

Ingredients
1 boneless, skinless chicken breast - cooked and shredded1/2 apple, peeled, choppedAppx. 2 Tbsp Light Mayo (depends how saucy you like your chicken salad, you can add more if needed)Splash of white wine vinegarCap full of lemon juice1/2 Tbsp honey (again, eyeball it, depends on how sweet you want it, use it to balance our the vinegar)1/2 tsp dried thyme leavesSalt, pepper to taste1/2 pita pocketA few walnuts chopped up (for crunch)Sliced tomato, parsley (optional)
Directions
Mix Mayonnaise, honey, splash of lemon juice, splash of white wine vinegar, dried thyme leaves, salt, pepper in a small bowl.

Mix together the chicken, walnuts, and apples together.

Add sauce to chicken mixture and stir. Stir in chopped parsley (optional).

Stuff chicken salad in pita pocket with a few tomato slices and enjoy!!
