Beef Soup Provencal

Ingredients
1 lb. ground beef1/4 diced onion1 can (15 oz) white beans, rinsed and drained1 can (14.5 oz) vegetable broth1 can (14.5 oz) diced tomatoes with garlic, basil and oregano1/2 tsp. herbes de Provence, crushed4 cups of Spinach
Directions
In large saucepan cook ground beef throughly with the onion, drain extra fat. Add beans, broth, tomatoes and the herbs. Bring to a boil. Reduce heat and simmer uncovered for 5 minutes. Stir in spinach and simmer another 5 minutes. Serve and enjoy!

    Canned ingredients add to a very high sodium content for this recipe. Instead of canned beans, soak dry beans over night and cook longer. Add fresh tomatoes later in the cooking process. Otherwise, great recipe. - 5/26/10

    This soup is absolutely delicious and very easy to make. The men in the house love it and they don't usually like soups but it's very hearty and tasty! We also use the extra lean ground beef to keep the amount of fat low. - 1/11/10
