Ingredients
Kirkland Artichoke Hearts marinated in oil, 5 hearts cut into chunks*Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 1 canZucchini, 1 cup, sliced Mushrooms, fresh, 1 cup, pieces or slices Onions, raw, 1 cup, chopped Carrots, raw, 1 cup, chopped *Couscous (dry), 0.33 cup Parmesan Cheese, grated, .3 cup italian herbs 1 Tcanola oil 2T
Directions
Saute mushrooms, zucchini, onion and carrots in canola oil until tender. Add tomatoes, couscous, seasonings, and cheese. Let cook for 5 more minutes until pasta is cooked. This recipe makes 4 servings.
