Sweet Pepper Pork Chops & Rice

Ingredients
6 pork chops2 cups white rice2 medium carrots, sliced1 16 oz. bag frozen chopped cauliflower1 Red sweet pepper, sliced2 cups chicken broth1tsp Tony Chacere's cajun seasoning or to tasteSpices to taste
Directions
Preheat oven to 375*. In a baking dish layer rice, then carrots, red peppers, then cauliflower. Add chicken broth. Add a little more if rice is not completed covered. Then, add pork chops on top and seasoning with cajun seasoning, s+p on both sides. Cover with foil and bake for 60 mins.

Makes 6 servings.

*Note: Even my kids really liked this one!
