Thai Inspired Coconut Cilantro Rice

Ingredients
1 cup basmati or jasmine rice1 can light coconut milk1 small bunch of fresh cilantro, chopped
Directions
Pour the coconut milk into a measuring cup then top-off with water until you have 2 cups of liquid. Pour into a medium saucepan and bring to a boil. Stir in the rice, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed. Remove from heat and stir in fresh chopped cilantro. Makes 4 1/2 cup servings.
