2 large bananas1 Thai coconut, liquid and meat extracted
Puncture coconut and drain liquid through a sieve into the blender. Break coconut in half. Using a Tablespoon, scrape the nut meat to remove from the hard shell. Place coconut meat into blender. Add two large bananas. Pulse briefly and then blend on high for one minute. Makes four servings sufficient to replace four meals.
