clam chowder

Ingredients
* Onions, raw, 1 large, chopped * Butter, salted, 1 tbsp * clam juice - 5 cups * *Potato, raw, 5 cup diced * Milk, nonfat, 5 cup * Milk, 2%, 2 cup * Butter, salted, 1 tbsp * Celery, raw, 1.5 cup, diced 39 ounces minced clams3/4 tsp. salt1/4 tsp. peppersprinkle of parsleyCan add grated cheese and/or fried bacon as a topping.
Directions
Saute onion and celery in one tablespoon butter. Add clam juice (reserved from canned clams plus additional 2 cups.)

Add potatoes and cook until tender. Add remaining ingredients. Heat through.

Makes approx. 22 1-cup servings or 11 2-cup servings.
