Ingredients
4 potatoes, baked 8 ounces reduced fat cheddar cheese, grated 1 cup fat-free sour cream 2 tablespoons chopped green onion Cut each potato into quarters lengthwise. Scoop out pulp. Spray potato skins with cooking spray and place on baking pan. Bake at 425 degrees for 10 minutes. Turn and bake for 5-8 additional minutes (until crisp and light brown). Remove from oven, place cheese, sour cream and onions on each quarter. Return to ove and bake until cheese melts.
