Tortilla Casserole

Ingredients
1 c chopped onion3/4 c chopped green pepper1 can (7.5oz) canned tomato, diced1/3c salsa1 clove garlic minced1tsp cumin1 can (15oz) Black beans6 (6in) corn tortillas! cup reduced fat Monteray-Jack shredded cheese(GARNISH)1 c shredded lettuce1/4 c fat free sour cream1 med tomato diced
Directions
combine first 6 ingredients, bring to a boil, reduce heat and simmer 10min. Stir in beans. Spread 1/3 mix in 2qt baking dish. Layer with 3 tortilla and half of cheese. Add another layer of mixture, followed by tortillas, then beans and top with remaining cheese. Cover and bake for 25-30 min. Remove and top with lettuce, tomato and sour cream. Yield 5 servings
