Chicken & Penne Pasta Bake

Ingredients
1 lb chicken, cubed2 cups whole wheat penne2 cups spaghetti sauce1 can (14 oz) diced tomatoes1 cup 2% shredded cheese1 tsp garlic powder1 tsp basil1 green pepper, chopped (optional)
Directions
Preheat oven to 375. Cook penne pasta according to package directions. In a large non-stick skillet, cook chicken, spices, and green pepper on med-high heat for 3 minutes. Add spaghetti sauce and diced tomatoes, heat to boiling, then simmer for 3 minutes. Drain penne pasta, and combine with chicken mixture. Add 3/4 cup cheese and mix. Pour into an 8x8 baking dish. Bake for 20 minutes, sprinkle w/ remaining cheese, and bake for an additional 3 minutes (or until cheese is melted).

Makes approximately 6 1-cup servings.
