Greek-Style Caprese Salad

Ingredients
4 Roma tomatoes, quartered1/4 cup feta cheese, cut into bite-sized chunks1/4 cup mint leaves, sliced into thin strips1 tablespoon olive oil1 teaspoon kosher or sea salt1 teaspoon coarse black pepper
Directions
Place tomatoes, cheese, and mint into salad bowl. In seperate bowl, whisk together oil, salt, and pepper. Pour over salad, gently toss.

Try using a lemon-flavoured olive oil for a little extra punch.
