rhubarb orange tapioca

5 c. rhubarb cut into one inch pieces2 oranges 5 large strawberries1/4 c. pearl tapioca1 c. Splenda for bakingabout 2 c. water
remove zest from one orange (set aside) and and then peel and cut into pieces. the other orange gets sliced into 1/2 inch and quartered. add water, rhubarb, oranges (including zest), strawberries, splenda, cover and bring to boil on med.-low.
Stir occasionally until rhubarb has sweat and broken up. add tapioca and turn to lowest setting. continue to cook until pearls are clear adding more water if needed to maintain desired consistency. Enjoy.
