Ingredients
1 tsp Chili powder 0.50 tsp Ginger, ground 1 tsp Turmeric, ground 1 tsp Salt 500 Eggplant, fresh 1 tsp Garlic 1 cup, chopped Onions, raw 1 tbsp Canola Oil
Directions
Take a nonstick pan add sliced eggplant to one tblsp oil and cover and steam cook till its red and crispy.
Take oil in a nonstick pan,saute onions till golden brown,add salt
Add red chilli powder 2 tsp,turmeric powder 1/4 tsp,add tomato puree 1 tblsp,add cumin seeds 1 tsp,saute well add above cooked eggplant and mix well.cook everything on low flame except when sauteing onions which is on medium flame.
cover on low flame for 2 mins and serve..
