Oat, Apple and Raisin Muffins

1 c. Raisins1 c. apple, cored, peeled and chopped1/4 c. oil3/4 c. soy milk1/3 c. sugar1/2 c. all-purpose flour1/2 c. whole wheat flour1 c. quick-cooking oats, uncooked2 t. baking powder1/4 t. nutmeg1/2 t. cinnamondash of cloves or allspice
Makes one dozen muffins
Combine currants or raisins with apple, oil, milk and sugar in a medium mixing bowl. Stir together flour, oats, baking powder, nutmeg, cinnamon and cloves in a separate bowl. Stir into raisin mixture just until combined. Divide batter equally into 12 greased or lined muffin cups. Bake at 400 degrees for 20 minutes or until golden.
