Chicken Tortilla Soup

Ingredients
1 can chicken broth 1 1/2 can water2 boneless chicken breast diced small1 4.5oz can chopped green chilis1 medium onion diced 2 cups diced celery2 cups finely chopped mushrooms 4 cloves minced garlic1/4 teaspoon red pepperSalt and Pepper to taste1/4 cup fresh chopped cilantro or 1/8 cup dried1 can cream of chicken soup1 can 15 oz. petitie diced tomatoes1 cup medium salsa3 cups of shredded cheddar
Directions
mix the first 11 ingredients together and bring to boil stirring to prevent chicken from clumping, turn down heat to simmer then add: cream of chicken soup, diced tomatoes and salsa. Simmer for about 1/2 hour stir often, then add 3 cups of shredded cheddar cheese. Simmer for about 10 more minutes. Makes about 12 soup bowls. Great topped with tortilla strips.
