Slow Cooker Lentils and Spinach

Ingredients
2 white onions, halved and sliced into 1/2 rings3 cloves garlic, minced1/2 cup lentils (red or green)2 cups water1 (10 ounce) package frozen spinach1 5" sweet potato diced to 1/2" cubes1 tbsp Indian curry powder1 tsp ground cuminblack pepper to taste
Directions
Makes 4 servings
Put all ingredients in crockpot and stir together. Heat on low for 3-4 hours or high heat for 1-2 hours depending on your crockpot until lentils and poatoes are tender.

    This is my go to pantry meal when I have nothing else to make. It works well for leftover lunches too. I add a little berber powder to add some heat (about 1/2 tsp). If I have it, I saute some spicy sausage. It ups the calorie count, but it is wonderful! Serve with some cous cous or brown rice. - 5/9/11

    I ate this for supper last night - pretty tasty, though without the frozen spinach I just added a bag of the prewashed fresh stuff 15 minutes from the end. I added Italian sausage for extra protein and didn't think it was at all bland. - 3/5/08
