Pork Medallions with Apple Chutney

Ingredients
Pork Medallions -1 lb. of pork tenderloin cut into 1 inch thick medallions-1/4 tsp of freshly cracked pepper-1/4 tsp kosher salt-1 tsp of dried rosemary-1 Large Ziploc bag Chutney -1 cup of onion,diced (particularly good with sweet Mayan onions)-3 apples peeled and diced-1/2 lemon juiced-1 Tbs butter-1 Tbs honey -1 tsp cinnamon
Directions
Serves 4 (2 medallions and 1 cup of chutney)

* Tip * : To prevent the apple dice from browning toss them into a bowl with half a lemon juiced, stirring every so often to keep them nice and fresh.

-Take a ziploc bag and add all the spices and pork medallions. Zip the top and shake until all the medallions are covered evenly. Set Aside until the barbecue is heated.

-Once Barbecue is heated turn it down to low heat and put the medallions on the grill. Cook for about 4 minutes per side, until cooked through.

-Meanwhile take a pan and heat over medium. Add the butter and saute the onions for one minute, then add the apples. Cook for 4-5 minutes until the apples begin to soften. toss in the honey, and cinnamon stirring until coated.

-Serve Pork medallions topped with chutney and a side salad.

    Very easy and tasty. My whole family really like this meal. I would add a little olive oil or some sort of oil to the bag before cooking to keep the medallions from becoming too dry. Also, I used maple syrup instead of honey with the apple chutney, which I though gave a better flavor. - 8/26/10
