Chili Mac ~ Gluten free

1 1/3 lb ground turkey2 eggs1 large onion, chopped16 ounce package of noodles3 cloves garlic, chopped2 14.5 ounces of canned, chopped tomatoes2 8 oz cans of tomato saucebasil, italian seasonings, oregano to taste.
In a bowl, mix the egg and meat until well blended. (I have chickens that are excellent layers, and have 3 dozen eggs I am trying to use up...thus, the "optional" part.)
When egg & meat is blended, put it in a soup pot with the onion. Brown on medium heat, until meat is well cooked, and onions are clear. Keep breaking up the meat in chunks, while stirring.
Add the remaining ingredients. Add enough water to cover the noodles completely.
Cook for about 15 minutes, or until the noodles are done and it is not "too soupy".
Serve hot.
