TW's Pumpkin Roll

Ingredients
3 eggs1 cup sugar1 teaspoon baking soda1/2 teaspoon salt2/3 cup canned pumpkin3/4 cup flour1 teaspoon cinnamon1 cup vanilla ice cream
Directions
Preheat oven to 350˚F. Beat the eggs by hand, then combine all ingredients. Grease a cookie sheet (with raised edges), then spread waxed paper on top, smoothing into corners. Grease the waxed paper. I used shortening to grease the pan and paper... Pour mixture into the cookie sheet, and bake for 15 minutes. When done, sprinkle confectioner's sugar on a clean dish towel. Flip the cake onto the sugared towel, and roll up while warm into a "log" shape starting at a small end. Let cool.
When completely cool, unroll and spread with the vanilla ice cream like you would frost a cake. Roll back into log shape and freeze. Serve frozen. Enjoy!
