One eggplant, cubed and salted2 ripe tomatoes, cubed1 and 1/4 c mushroom, sliced1 onion, sliced (about one cup)1 c firm tofu1 tbsp EV Olive Oil1 clove garlic, diced1 tsp oreganodash red peppersalt and pepper to taste
Heat oil in skillet over medium heat and add garlic. Add onion and cook for a few minutes until starts to turn brown. Add mushroom and spices, cook for one minute. Add eggplant, cover and on medium low heat let sit for 10 minutes, stirring once at 5 minutes. Uncover and add tomatoes and tofu and heat through. Makes approx. 4 - 1c. servings.
