Spinach-Cheese Omelette

Ingredients
1/2 c. egg white (substitute, if you prefer)1/2 c. frozen chopped spinach---squeezed 'dry'1/3 c. Weight Watchers shredded mozzarella cheese(28gms)cooking spray
Directions
Put egg whites into a skillet sprayed with cooking spray. Heat. While cooking, distribute spinach over egg white. Cook until firm, add cheese. & continue to cook until cheese is melted. Enjoy this with a salad to make this a great dinner..or with toast for a filling breakfast! You can add pico de gallo to the spinach or even fresh mushrooms, if you like.
