Vegan Sloppy Joes

Ingredients
1 cup Textured Vegetable Protein (TVP) rehydrated as per the instructions1 tsp olive oil1 onion, chopped fine1 red pepper, chopped fine4 portabello mushrooms, chopped fine1 garlic clove, minced1 cup ketchup1 cup barbecue sauce1 Tbsp Lee & PerrinsAdditional season as desired such as oregano, hot mustard, salt, pepper, etc. Play around until you get a flavour that you really like.
Directions
Makes 6 servings, approximately 3/4 cup each

Rehydrate the TVP

Heat olive oil in saucepan. Saute onion, red pepper until starting to soften. Add mushrooms, and continue cooking until vegetables are softening. Add TVP, sauces & seasoning.

Reduce heat and simmer for about 20 minutes, stirring occasionally to prevent sticking

Serve on a bun with shredded cheese if desired.
