Vegetarian Quinoa Salad

Ingredients
1 cup uncooked (approx. 5 cups cooked) quinoa1 can or 3 1/2 cups corn, drained1 can or 3 1/2 cups chick peas, rinsed and drained12 oz jar roasted red peppers, drained and chopped1 box frozen chopped spinach, cooked, drained1/4 cup chopped sundried tomatoes1/4 cup chopped red onion1 tbls butter1 bouillion cube
Directions
Mix the quinoa, butter, bouillion and chopped red onion; cook with water according to the package directions. Cool and add to large bowl. Cook frozen chopped spinach, drain, cool and add to bowl.
Add other ingredients. Mix and serve.
