Slow Cooker Minestrone Soup

Ingredients
Non-stick Cooking Spray 1 medium onion, minced2 garlic cloves, minced 1 medium zucchini, diced1 c green beans, cut into 1 in. pieces 14.5 oz. canned diced tomatos, not drained15.5 oz. canned garbanzo beans, rinsed and drained6 cups vegetable stock salt and pepper to taste 1 c dry small pasta (like small elbows, penne)
Directions
Spray the bottom of a slow cooker (6 qt. preferrably) with non-stick cooking spray.
Cook onions, garlic on high in slow cooker while getting the other ingredients ready.
Add in the zucchini, green beans, tomatos, garbanzo beans, vegetable stock, salt and pepper and place slow cooker on low for 7-8 hours.
During the last hour of cooking, add in the pasta to finish cooking.
Enjoy! Makes 17 half cup servings
