Ingredients
2 tsp. olive oil4 cloves of garlic minced1 onion diced1/4 cup carrots chopped2 celery stalks diced1 20 oz pack lean ground turkey7 cups of water4 medium peeled and diced potatoes8 oz of yellow corn14.5 oz can of green beans (drained)1-8 oz can tomato sauce1 -cup low sodium chicken broth1/2 tsp. salt 1/2 tsp. pepper1 lime juiced1 Tbsp. chopped fresh oregano1 tsp. chopped fresh thyme 1 Tbsp. chopped fresh parsley
Directions
Makes 8 servings:
Add olive oil to large pot,I use my dutch oven.Then add diced onion,chopped carrots, and celery cook about 5min. Next add ground turkey ,minced garlic, pepper, and 1/4 tsp salt to pot. Brown turkey, then add chicken broth and 7 cups of water. Bring to a boil. Add potatoes and cook them for 20 min at a low boil. Then add drained green beans, corn,tomato sauce,oregano, thyme , parsley and squeezed lime juice. Cook uncovered for 20-25 min until desired thickness. For a kick and some crushed red pepper, chipotle powder or hot sauce.
