Glazed Chicken with Cashews

1/2 cup cashew nuts, toasted1 red pepper, cut into strips1 lb boneless, skinless chicken breast, cut into strips2 tsp canola oil, divided4 garlic cloves, minced2 tbsp cooking sherry2 tbsp hoisin sauce1 tsp sesame oil5-6 green onions, chopped
Heat wok or large frypan. Add 1 tsp of the canola oil. Add garlic and let it sizzle for a few seconds. Add the chicken and stir-fry until no longer pink. Remove chicken and set aside.
Add the remaining 1 tsp oil and stir-fry the pepper for about 2 minutes. Add chicken back to pan along with sherry and hoisin sauce. Continue to stir-fry until all ingredients are evenly glazed.
Stir in the sesame oil, toasted cashews and green onions. Serve immediately with rice or noodles.
