Mustard, Dill and Green Bean Salad

Ingredients
2 lbs French (or regular) Green Beans1/2 C thinly sliced Red Onions2 T minced fresh Dill1 T Balsamic Vineger1 T Red Wine Vinegar1 t sugar2 T Extra Virgin Olive Oil1 1/2 T Dijon Mustard1/4 t kosher salt1/4 t freshly ground pepper
Directions
Makes 8 Servings

1. Bring a large pot of salted water to a boil (about 2 t salt per quart). Drop in the green beans, bring back to a boil and cook about 2 minutes until crisp-tender. Drain and immerse the beans in a bowl of cold water to stop the cooking process.

2. Toss beans with the onions and dill

3. Whisk together the remaining ingredients and toss with the salad. Bring to room temperature before serving.
