Turkey Veggie Frittata

Ingredients
4 eggs1 cup liquid egg whites (from carton)1 1/2 turkey burger patties chopped3/4 C asparagus chopped3/4 C fresh mushrooms sliced1 1/2 C fresh spinach1/2 C red onion chopped1 medium ripe tomato sliced thin1/2 C fresh grated parmasan cheeseitalian seasoningolive oil
Directions
Heat olive oil in oven safe skillet
saute all fresh veggies in olive oil with spices
Add egg whites and scrambled eggs to skillet
Turn down temp to low
Add parmason cheese to top
Allow egg to slightly set on low, then move skillet to oven
Cook at 350F until the egg rises and browns slightly on top
