Fruity Amaranth Breakfast

1 C amaranth2 C water2 apples, diced2 C frozen blueberries1 banana6 dried apricots1/4 C pecans, chopped6 tsp raw unhulled sesame seeds
Toast amaranth in cooking pot until it begins to make a popping sound. Add water and bring to a boil. Cover, and simmer for 20 minutes.
Meanwhile, chop, dice, and thaw all fruit and nut add-ins.
At the 20 minute mark, add all the fruits. Stir, cover, and simmer for another 5-10 minutes.
When amaranth is cooked through (will be quite gummy), add the nuts and remove from heat.
Sprinkle 1 tsp of sesame seeds on each portion before serving.
