Tabbouleh

Ingredients
1 1/4 C water1 Cup uncooked bulgur1 cucumber peeled, seeds removed, sliced2 roma tomatos sliced1/2 c of scallions (green onions) chopped1 1/2 C Garbanzo beans (chickpeas) rinsed2 tsp olive oil3 TBSP lemon juiceSalt, pepper, garlic salt, parsely, chili powder, and mint to taste.
Directions
Bring water to a boil. Add bulgur, remove from heat, cover and let stand until water is absorbed (25-30 min).

Mix the veggies and garbanzo beans together. When bulgur is cooked add to mixture. Season with lemon juice, olive oil and spices. Chill and serve!
