8 cups water4 medium potatoes, cubed4 medium carrots, sliced1/2 cup rice (brown or white)3/4 cup elbow macaroni2 cup low sodium tomato juice1 15oz. can of dark red kidney beans2 TBSP. chili powder1 lb. ground beef 85/15salt and pepper to tasted
Bring water to boil--add carrots, potatoes, rice and macaroni. Season to taste. Cook until tender (approx. 25 minutes). Fry hamburger, drain grease and season to taste with pepper or salt. Add tomato juice and hamburger to soup. Simmer briefly. Add kidney beans and chili powder. Simmer briefly. Makes 14 one cup servings.
