Janet's Creamed Spinach

Ingredients
2 Cup Spinach, cooked4 Tbsp Low Fat Cream Cheese1 Tbsp Butter, unsalted melted1/4 Cup Parmesan Cheese2 Tbsp Greek Yogurt, nonfat2 Tbsp Durkee Fried Onion Rings1 Tbsp Onions, chopped fine1 Clove Garlic, minced
Directions
Melt Butter medium saucpan. Saute onion and garlic in melted butter. When onions and garlic have sweated, add spinach and cook until heated through. Add cream cheese and cook for a couple minutes until the cream cheese melts, then add the 2 tbsp of Greek Yogurt. Stir to combine. Add Durkee Onion Rings, place cover on pan and let simmer until onion rings are crisp.
Serving = 1/2 cup. Makes 4 servings
