Ingredients
Directions
1 Red onion1 Summer squash1 Zucchini2 Cloves of garlic1 Red pepper (any kind will do)1 Can diced tomatoes (no salt added)1 Can stewed tomatoes1 Can chickpeas1 tbsp olive oil
Slice all veggies the veggies into chunks
Saute garlic and onion together for 5 minutes
Add in all the pepper, squash and zucchini until tender
Move all ingredients to a dutch oven
Add diced and stewed tomatoes
Simmer 20 minutes, adding the chick peas in the last 5 minutes.
**Season to taste or it will be bland, I like to use pepper, a little salt and rosemary/basil and other assorted herbs!
Enjoy with some Mexican cheese melted on top! (not included in calories!)
Each serving is about a cup :)
