Sweet Potato pancake (GF)

Ingredients
Ingredients:Sweet potato, 4 sweetpotato, 5" long (remove)Baking Powder, 2 tsp (remove)Egg, fresh, 1 large (remove)Milk, nonfat, .33 cup (remove)Margarine, hard, 1 stick (remove)*Tapioca Flour, .25 cup (remove)*Bob's Red Mill Gluten Free Sorghum Flour, 1 cup (remove)
Directions
Peel, cube, and boil sweet potatoes. Drain and mash. Add remaining ingrediants adn mix well. Spoon mixture on heated non-stick griddle. Flip with rinsed spatula.
Salt to taste.
