Baked,Sweet'n'Sour Chicken Egg Rolls

Ingredients
15 egg roll wraps1/2 cup crushed pinapple(drained)3 chicken breasts( cooked & cut into small bits)14 oz bag Cole Slaw mix (boiled for about 3 min & drained) 1 Tblsp soy sauce1 tblsp corn starchyour favorite sweet'n'sour sauce, for dipping(not included in calories)
Directions
preheat oven to 400 degrees

in mixing bowl, combine... pineapple, cole slaw, cooked chicken bits, soy sauce, & corn starch.

Fill & fold wraps according to package directions, using 1/3 cup filling each.

Lightly spray a large baking sheet with cooking spray. Place egg rolls on baking sheet. Spray tops lightly with cooking spray.

Bake for 20 - 25 min.

Makes 15 Egg Rolls.

    I used leftover lamb instead of chicken...good, but a little dry. I usually don't like sweet and sour sauce either...maybe I need to try these with the sauce and flavor it up a bit - 6/14/10

    We only ended up with 12 egg rolls (and we only did 2ckn breasts) but it was great. The wrap was a little bland tasting but the filling was awesome. I used manderine oranges instead of pineapples because that's what was in the pantry. - 5/3/10
