Pork Chop & Lima Bean Skillet for Two

Ingredients
2 4oz Boneless center cut pork chops, trimmed of fat1/2C Chopped onion1 Med carrot, peeled and thinly sliced1/4 tsp Minced garlic, or to taste1 1/4C Diced tomatoes, no salt added, with juice1/2 tsp Light Brown sugarDash of pepper, to taste3/4C Frozen baby lima beans, partially thawed
Directions
This recipe makes two servings. 1 Serving = 1 chop & 1 Cup of vegetable mixture.

1. In large non stick skillet, coated with cooking spray, brown the pork chops for 5 mins on each side. Place the chops on a platter and set aside.

2. Sauté the onion in the skillet until tender but not brown, about 5 mins. Add carrot & garlic and sauté for about 3 more mins. Add he tomatoes, sugar and pepper. Return the pork chops to the skillet.

3. Bring to a boil, then reduce heat to low, cover & simmer for 20 mins. Stir in the lima beans pushing them down into the liquid. Simmer, uncovered, until he pork chops are tender, about 15 more mins or until the meat and vegetables are tender and cooked to your liking.
