Chicken and Rice Bowls

Ingredients
1 cup brown rice, uncooked1/2 cup onions, diced2 garlic cloves, minced1 tbsp olive oil2 chicken breast, grilled (boneless, skinless)4 cups lettuce2 cups tomatoes8 tbsp salsa, divided3 cups water
Directions
Brown the brown rice in a skillet with olive oil.
Add onions and garlic. Cook 2 min.
Add water, 4 tbsp salsa, cover and let simmer for 45 min.
When rice is done, layer in a bowl the rice, chicken, salsa, lettuce, and tomatoes.
You could add cheese and avocado if you like, but that adds more fat.
