potato cake

Ingredients
4 russet potatoes or any other starchy potato1/4 cup olive oilsalt and pepper to taste
Directions
Grate the potatoes and squeeze out any excess moisture. Add salt and pepper and mix well. Heat a large skillet over medium heat and add oil. When hot put in the potatoes and press down to make the cake. After 7 minutes flip and cook for 7 minutes on the other side. Take out of the pan and cut into wedges
