basic bean and rice burrito

1 8" flour tortilla, 2.5 ounces refried beans (vegetarian), 3T salsa, .5 ounce 2% cheddar cheese
Begin with making the rice--I put in water an inch above rice, stir once and keep at a simmer with the lid off until all the water has been absorbed/evaporated. Works brilliantly. Usually takes about 20 minutes. Meanwhile, shred your cheese, and make salad or whatever other sides you want on the plate. Once you've got cooked rice, assemble burrito: mix rice and beans together, add salsa and cheese, keeping about two inches clear all the way around. Fold bottom of burrito up, fold sides in, and roll. Warm in microwave for one minute, or until hot. Congratulate self for not ordering in. Yum. Self satisfaction is the greatest seasoning of all.
