Chicken Kowloon Crock Pot- Low Fat

Ingredients
2 Pounds Chicken Breast- boneless, skinless cut in big chunks1 Pound Boneless skinless chicken thighs, cut in big chunks1/4 Teaspoon Ground GingerPepper to taste1 Clove Garlic, minced1 Cup low sodium vegetable broth1 Can (8 1/2 ounces) Pineapple Chunks in juice1 Cup Water Chestnuts, rinsed and sliced4 Green Onions, diagonally cut1/4 Cup Cornstarch1/4 Cup Less Sodium Soy Sauce1 Tablespoon White Vinegar
Directions
Place Chicken in slow cooker. In a bowl combine pineapple juice, ground ginger, garlic & vegetable broth, set aside. Lay pineapple chunks over chicken and then top with water chestnuts. Pour ginger sauce over chicken. Cover and cook on high for 1 hour then lower heat to low and cook for at least 3 hours or up to 8 hours. Add green onions and turn crock pot to high. In a small bowl dissolve cornstarch in soy sauce and vinegar. Stir into crock pot and continue to cook on high for 10 to 15 minutes or until slightly thickened. Serve over brown rice. (not counted in the nutritional values)
