Lean Taco Salad

Ingredients
1/2 lb ground turkey1/8 tsp chili powder1/8 tsp cayenne pepper3 tbsp vinegar3 tbsp salsa15oz can kidney beans, drained4oz diced green chiles, drained3 cups lettuce, shredded1 cup chopped cauliflower1 medium tomato, chopped1 small carrot, shredded1/4 shredded cheddar cheeseextra salsa (optional)
Directions
Brown turkey. Drain. Add chili powder, cayenne, vinegar, 3 tbsp salsa, kidney beans, and green chiles. Cook until thoroughly heated.
In large bowl combine lettuce, cauliflower, tomato, and carrots, and toss. Spoon lettuce mixture into four individual salad bowls. Top with hot turkey mixture. Sprinkle with chese. Serve with extra salsa, if desired.
