Skinny Alfredo

1 cup 1% milk1 tbsp. unsalted butter1 tsp. olive oil1/2 oz parmesan cheese2 tsp. minced garlicDried oregano and parsleySalt and Pepper to taste
1.) Melt the butter in a small saucepan over medium heat. When it starts to foam a little, add in the garlic and olive oil.
2.) Slowly whisk in the flour. Let the flour and fat come together into a paste (called a roux), then add in the dried herbs.
3.) Slowly whisk in the milk until the roux is fully integrated. Bring this to a boil over medium heat, which should take about 7 minutes or so.
4.) Drop the heat to low the minute the sauce begins to bubble -- it should be nice and thick now. Add the cheese, salt and pepper, and serve over your favorite pasta dishes!

I noticed this recipe didn't state how much flour. To help out any who may be wanting to try this out, a general rule when making rue is equal parts fat and flour. For this recipe, that means that you would use one tablespoon of flour. Overall a great recipe. I added a sprinkle of onion powder, too. - 12/3/11
