Veggie Patties

Ingredients
1 small Zucchini, grated1 medium Potato, grated1/4 c Onions, grated2 large Mushrooms, diced3/4 c Egg substitute
Directions
Grate Zucchini, potato, and onion into collander. Push gently to remove excess water from veggies. Add to bowl along with mushrooms and egg substitute. Stir until well combined. Add salt and pepper to taste. Pour appx 1/2 c of mixture onto a hot griddle or pan. Cook 2-3 minutes on each side or until golden brown or no longer runny in the middle. Makes appx 5 patties. Serve as sandwiches or as a side dish.
