Canadian Bacon and egg cups

Ingredients
2.5 cups of egg substitue.5 cup of 1% cottage cheese.5 cup lowfat monterey jack cheese, shredded3 Tbs chopped scallions1t garlic4 Tbs roasted red pepper1 pkg (12 slices) Rose thin sliced canadian baconsalt 1 t or to tastepepper 1 Tbs or to tasteparsley 1 Tbs
Directions
preheat oven to 350 degrees
spray muffin tin w/non-stick spray
place 1 thin-sliced canadian bacon in each cup
mix all other ingredients.
fill each muffin tin w/egg mixture
bake for 25-30 minutes, until eggs have puffed up and are slightly browned
